The Marshmallow Lady is coming to Canonmills – celebratory competition!

If you keep up with her on Facebook or Twitter, you may have picked up that Nicole Roberts, The Marshmallow Lady (AKA  Burgh Bakes ) is about to open her very own shop in the Canonmills area. What an exciting part of the town this is turning into, with Earthy Three and Cuckoo’s Bakery just minutes away, as well as the long-established shops on Broughton Street! Not long after having discovered the joys of gourmet marshmallows, I met with Nicole last year and we had a wee chat, blog post here.

The new shop , Called ‘The Marshmallow Lady’ is at 14 Rodney Street, and promises to be nothing short of mana from marshmallow heaven. In Nicole’s own words:

The Marshmallow Lady’ will provide what it says on the tin, so to speak! We’ll have more Marshmallows than you’ve ever seen in your life, in an astounding assortment of flavours, with bases, toppings, in fluff form, s’more kits, mallow tray bakes, toasting bags and even more!’

The shop will not only be a showcase for your gourmet ‘mallows, but offer other tempting treats from local bakers, coffees, retro milskhakes and ice teas.

Instead of a lump of tablet on your saucer when your order a tea, coffee, hot chocolate or macchiato you’ ll get a beautiful marshmallow, often it will be one of my seasonal, or special edition Marshmallows.

There will be milkshakes which incorporate Marshmallows.  During the summer I’ll be making homemade ice tea, lemonade, and cream soda, I also hope to offer ice-creams with marshmallows atop; you might be sensing a theme here! Cake Pops will be supplied by the hugely talented ‘Cakes by Lyndsey’, and cakes will be sourced from the amazing array of local talent including ‘Love Crumbs’ and ‘Love Pure Cakes’.

‘The Marshmallow Lady’ should be open at the end of June 2012, perhaps sooner. Keep your eyes peeled on Facebook and Twitter for the grand opening, where Nicole hopes to have a cocktail themed event where she’ll match cocktails to Marshmallows. Mojito Marshmallow anyone?

  1. I didn’t know marshmallows could be so amazing until I tried the passionfruit ones. Pimms sounds great too. What about elderflower or another summer cocktail flavour? Mojito perhaps!?

  3. How exciting! How about tastes of Scotland? Whisky, raspberry, strawberry, craft beers, irn bru, haggis, neeps, tatties…. A regular mixed bag 🙂

  4. I scoffed down a packet of her Innis and Gunn marshmallows in under 24 hours, it’s easily done! How awesome would dandelion and burdock marshmallows be!!?? Or blueberry cheesecake!
