I am a happy girl. Asparagus season is coming up! I jumped the gun about 10 days ago and snapped up a pack from Tesco that was from Herefordshire, but I know that with a bit of patience, the Scottish stuff will be here soon enough.
Ingredients on the ‘plate of joy’
2 slices of buttered Au Gourmand Pain de Campagne from Circle Bakery
3 slices of frazzled black forrest ham (from Lidl)
2 poached organic eggs
1 pack of asparagus. Asparagus stalks just slightly peeled, and sauteed with a smidge of maple syrup. Once you start mixing in the creamy egg yolk, the buttery bread and the salty bacon, just a touch of sweetness brings this all together.
Prep time: 4 minutes
Cooking time: 10 minutes
Eating time: something around the 4 minute mark!
