For those familiar with my baking skills, usually the small cakes are fine. I seem, however, to have had rather disproportional bad luck when it comes to making full sized versions.<\/p>\n<p>So, I headed off to <span class=\"blsp-spelling-error\" id=\"SPELLING_ERROR_1\">Lakeland<\/span> to invest in a spring-form tin, a new set of icing nozzles, and wooden spoons. Ready to go. The recipe I went for was a variation on a theme of a recipe I found on the BBC good food website. Mum always used to make the recipe which involved pineapples, and so this is the one I went for. The ad-libbing incorporates the <span class=\"blsp-spelling-error\" id=\"SPELLING_ERROR_2\">crystalised<\/span> ginger, pecans and the cardamom seeds.  I also opted for half-fat cream cheese and added some zest to the icing.<br \/>The result was a worthy birthday treat!<\/p>\n<p><span style=\"font-weight: bold;\">Ingredients<\/span><br \/>300g plain flour<br \/>3 tsp cinnamon<br \/>1 tsp baking powder<br \/>1\/2 tsp bicarbonate of soda<br \/>2 tsp cardamom seeds &#8211; ground finely with pestle and mortar<br \/>225g soft brown sugar<br \/>4 eggs<br \/>225ml ground nut oil<br \/>zest of 1 orange and zest of 1 lemon<br \/>200g  grated carrots<br \/>25g <span class=\"blsp-spelling-error\" id=\"SPELLING_ERROR_3\">crystalised<\/span> ginger chopped finely, or fresh ginger grated finely<br \/>75g walnuts<br \/>75 g pecans<br \/>220g tin of pineapple chunks or sliced pineapple, whizzed up<\/p>\n<p><a onblur=\"try {parent.deselectBloggerImageGracefully();} catch(e) {}\" href=\"http:\/\/3.bp.blogspot.com\/_v0UdCJPF7lg\/Sr_ZVU5kVqI\/AAAAAAAAAFQ\/OVKUtDXIduY\/s1600-h\/August+2009+014.jpg\"><img style=\"margin: 0px auto 10px; display: block; text-align: center; cursor: pointer; width: 171px; height: 128px;\" src=\"http:\/\/3.bp.blogspot.com\/_v0UdCJPF7lg\/Sr_ZVU5kVqI\/AAAAAAAAAFQ\/OVKUtDXIduY\/s320\/August+2009+014.jpg\" alt=\"\" id=\"BLOGGER_PHOTO_ID_5386262639769048738\" border=\"0\" \/><\/a><br \/><span style=\"font-weight: bold;\">Temperature\/cooking time\/cake tin<\/span><br \/>Oven 160c (fan 130c)  &#8211; cooking time around 1hour 20 to 30 <span class=\"blsp-spelling-error\" id=\"SPELLING_ERROR_4\">mins<\/span>.<br \/>Use a 20cm cake tin. Can&#8217;t recommend the spring-form style enough &#8211; so easy to get the cake out!<\/p>\n<p><span style=\"font-weight: bold;\">Method<\/span><br \/>Into a large mixing bowl, sift or dredge the flour, and add the baking powder, bicarb, cinnamon, and cardamom.<br \/>Stir in the sugar.<br \/>In a separate bowl, beat the eggs with the oil until emulsified, <span class=\"blsp-spelling-corrected\" id=\"SPELLING_ERROR_5\">and<\/span> then add the citrus zests.<br \/><a onblur=\"try {parent.deselectBloggerImageGracefully();} catch(e) {}\" href=\"http:\/\/1.bp.blogspot.com\/_v0UdCJPF7lg\/Sr_aaDx_VWI\/AAAAAAAAAFg\/zKQJr9E-3bM\/s1600-h\/August+2009+018.jpg\"><img style=\"margin: 0px auto 10px; display: block; text-align: center; cursor: pointer; width: 151px; height: 114px;\" src=\"http:\/\/1.bp.blogspot.com\/_v0UdCJPF7lg\/Sr_aaDx_VWI\/AAAAAAAAAFg\/zKQJr9E-3bM\/s200\/August+2009+018.jpg\" alt=\"\" id=\"BLOGGER_PHOTO_ID_5386263820584834402\" border=\"0\" \/><\/a><br \/><a onblur=\"try {parent.deselectBloggerImageGracefully();} catch(e) {}\" href=\"http:\/\/2.bp.blogspot.com\/_v0UdCJPF7lg\/Sr_aZ2jJsCI\/AAAAAAAAAFY\/0wEiWEmzl6g\/s1600-h\/August+2009+016.jpg\"><img style=\"margin: 0px auto 10px; display: block; text-align: center; cursor: pointer; width: 151px; height: 114px;\" src=\"http:\/\/2.bp.blogspot.com\/_v0UdCJPF7lg\/Sr_aZ2jJsCI\/AAAAAAAAAFY\/0wEiWEmzl6g\/s200\/August+2009+016.jpg\" alt=\"\" id=\"BLOGGER_PHOTO_ID_5386263817032937506\" border=\"0\" \/><\/a><br \/>Add this to the dry ingredients.<br \/>Lastly stir in the nuts and pineapple.<br \/>Pour the mix into the cake tin and bake in the oven. I put the timer on for 1hour 10 to start, and checked things how things were looking then. The final cooking time was around 1hour 25 <span class=\"blsp-spelling-error\" id=\"SPELLING_ERROR_6\">mins<\/span>.<br \/>Take the cake out of the oven, the tin and then leave to cool for at least an hour on a wire rack.<\/p>\n<p><a onblur=\"try {parent.deselectBloggerImageGracefully();} catch(e) {}\" href=\"http:\/\/1.bp.blogspot.com\/_v0UdCJPF7lg\/Sr_bUPhX3eI\/AAAAAAAAAF4\/TgJDIOGT8js\/s1600-h\/August+2009+025.jpg\"><img style=\"margin: 0px auto 10px; display: block; text-align: center; cursor: pointer; width: 149px; height: 198px;\" src=\"http:\/\/1.bp.blogspot.com\/_v0UdCJPF7lg\/Sr_bUPhX3eI\/AAAAAAAAAF4\/TgJDIOGT8js\/s200\/August+2009+025.jpg\" alt=\"\" id=\"BLOGGER_PHOTO_ID_5386264820168777186\" border=\"0\" \/><\/a><\/p>\n<p><span style=\"font-weight: bold;\">For the icing <\/span><br \/>75g unsalted butter at room temperature<br \/>50 g icing sugar<br \/>225g tub of half-fat cream cheese<br \/>2 tbsp lemon and orange zest<\/p>\n<p><span style=\"font-weight: bold;\">Method <\/span><br \/>Beat the butter and icing sugar together until they&#8217;re soft, and then add in the cream cheese and zests. Mix together until it has an even consistency.
