{"id":544,"date":"2011-10-29T09:47:14","date_gmt":"2011-10-29T09:47:14","guid":{"rendered":"http:\/\/www.leilappetit.com\/blog\/?p=544"},"modified":"2011-10-31T13:01:51","modified_gmt":"2011-10-31T13:01:51","slug":"my-day-at-the-cook-school-scotland","status":"publish","type":"post","link":"http:\/\/leilappetit.com\/?p=544","title":{"rendered":"My day at The Cook School Scotland"},"content":{"rendered":"<p style=\"text-align: justify;\">As anyone who reads my blog knows, I&#8217;m a pretty enthusiastic foodie-type, and along with the restaurant reviews, I love to do a lot of home cooking. At the start of October, I was invited along to a day at <strong><a title=\"The Cook School Scotland \" href=\"http:\/\/www.cookschool.org\/\" target=\"_blank\">The Cook School Scotland\u00a0<\/a>\u00a0<\/strong>, for their Market Kitchen day class. Based just outside of Kilmarnock, for me it meant an early start via Glasgow. Caff\u00e8 latte in hand, I boarded the train at Central Station ready for the day&#8217;s culinary adventures.<\/p>\n<p style=\"text-align: justify;\">The group of 10 or so aspiring chefs met in the\u00a0communal\u00a0(and may I say rather fancy) dining room for a nice cuppa and bacon roll, before the school&#8217;s Head Chef, Phil Lewis came in to introduce himself and his &#8216;sous&#8217; for the day, Heather. The group of waiting cooks were a good mix of teens. ladies and gents, and everyone seemed raring to go. As pretty much each and every one of my day&#8217;s thoughts are centered around food, it was with welcome ears that we were talking about British seasonal and local ingredients, and the plans for the day&#8217;s recipes just after 10am!<\/p>\n<p style=\"text-align: justify;\">After the appropriate safety briefing, and \u00a0bit of info on the induction hobs (which I was well-excited to be spending a day in the company of) we moved through to the classroom for the first of the day&#8217;s demos. The format went along the lines of presentation and demonstration by Chef Phil, loads of great advice and info along the way, a chance for us to ask any questions, and then we were released to our work-stations to give the recipe a go.<\/p>\n<p style=\"text-align: justify;\">Combining the best bits of school, an easy Sunday in the kitchen at home and being on MasterChef, the day really did fly in.<\/p>\n<p style=\"text-align: justify;\"><strong>The best bits:<\/strong><\/p>\n<p style=\"text-align: justify;\">Spending a whole day cooking on induction hobs and not &#8216;feeling the heat&#8217;<\/p>\n<p style=\"text-align: justify;\">Learning a bit of self-discipline when it comes to breaking the habit of\u00a0unnecessarily\u00a0and incessantly poking and stirring things in a pot on the hob. It&#8217;s ok if stuff sticks. You&#8217;ll gain flavour. Leave it alone!<\/p>\n<p style=\"text-align: justify;\">Remembering how much I love beetroot. And venison. And cabbage.<\/p>\n<p style=\"text-align: justify;\">Discovering how easy it is to make pannacotta and biscotti.<\/p>\n<p style=\"text-align: justify;\"><em>Finally<\/em> nailing the technique of removing vanilla seeds from the pod &#8211; it&#8217;s all in the knife angle, folks!<\/p>\n<p style=\"text-align: justify;\">En papillote rocks the roasted root veggies.<\/p>\n<p style=\"text-align: justify;\"><strong>The bad bits:<\/strong><\/p>\n<p style=\"text-align: justify;\">Subjecting anyone within earshot for the next month to numerous &#8216;Cook School Phil said&#8217; food-related anecdotes.<\/p>\n<p style=\"text-align: justify;\">Being unable to find an online supplier who will deliver Maitre Andre puff pastry to my flat.<\/p>\n<p style=\"text-align: justify;\">Going home and remembering I don&#8217;t have a state-of-the-art Miele kitchen, and wondering why I chickened out of going for induction hobs when installing our new kitchen last year.<\/p>\n<p style=\"text-align: justify;\">Discovering I don&#8217;t have a &#8216;crew&#8217; at home who magically take all of the dirty dishes away!<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter\" title=\"For me? \" src=\"http:\/\/farm7.static.flickr.com\/6111\/6211219853_162e0f844a.jpg\" alt=\"\" width=\"500\" height=\"375\" \/><\/p>\n<p style=\"text-align: center;\">Ready for action!<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter\" title=\"Pannacotta \" src=\"http:\/\/farm7.static.flickr.com\/6164\/6211227721_dc032382d5.jpg\" alt=\"\" width=\"500\" height=\"375\" \/><\/p>\n<p style=\"text-align: center;\">I say, I&#8217;m making pannacotta!<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter\" title=\"My venison getting its stew on \" src=\"http:\/\/farm7.static.flickr.com\/6176\/6211743288_f80e33c05f.jpg\" alt=\"\" width=\"500\" height=\"375\" \/><\/p>\n<p style=\"text-align: center;\">Venison, thyme and red wine casserole<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" class=\"aligncenter\" title=\"Beetroot and pastry \" src=\"http:\/\/farm7.static.flickr.com\/6103\/6211749424_97851f6a29.jpg\" alt=\"\" width=\"500\" height=\"375\" \/>Beetroot on their puff pastry beds, ready to go in the oven.<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter\" title=\".\" src=\"http:\/\/farm7.static.flickr.com\/6166\/6211251429_6539375ac7.jpg\" alt=\"\" width=\"500\" height=\"375\" \/><\/p>\n<p style=\"text-align: center;\">Lunch &#8211; our very own Arran beetroot, Dunlop goat&#8217;s cheese tart<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter\" title=\"Chef's focaccia \" src=\"http:\/\/farm7.static.flickr.com\/6040\/6211256349_0659d01d0b.jpg\" alt=\"\" width=\"500\" height=\"375\" \/><\/p>\n<p style=\"text-align: center;\">Chef&#8217;s foccacia and biscotti, cooling on the rack<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" class=\"aligncenter\" title=\"Venison for dinner \" src=\"http:\/\/farm7.static.flickr.com\/6091\/6211267305_ea1e7d013f.jpg\" alt=\"\" width=\"375\" height=\"500\" \/><\/p>\n<p style=\"text-align: center;\">Before we headed home, dinner time! Our venison stew, mash, cabbage with bacon and Arran mustard.<\/p>\n<p style=\"text-align: center;\">Oh. Yums, more like.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" class=\"aligncenter\" title=\"Our bag for life to take home \" src=\"http:\/\/farm7.static.flickr.com\/6176\/6211800834_2faa2d98b4.jpg\" alt=\"\" width=\"500\" height=\"375\" \/><\/p>\n<p style=\"text-align: center;\">Our bag to take home with left-over edibles, the folder with all the recipes, apron and pencil.<\/p>\n<p>Not long after my visit The Cook School won a major 5star award for tourism in Ayshire, so congrats to all; it really is a fantastic facility. And only an hour or so from Edinburgh!
