Eating chocolate without feeling guilty has to be the ultimate &#8216;score&#8217;. The company earned some great word of mouth and press earlier this year when they opened a &#8216;pop-up&#8217; shop on Edinburgh&#8217;s George Street ,and their online store features a fabulously tempting selection of cacao-based treats.&nbsp;<\/span><\/div>\n<div style=\"text-align: justify;\"><span class=\"Apple-style-span\" style=\"font-family: Georgia, 'Times New Roman', serif;\"><br \/><\/span><\/div>\n<div style=\"text-align: justify;\"><span class=\"Apple-style-span\" style=\"font-family: Georgia, 'Times New Roman', serif;\">These particular bars are from fairly-traded beans from Peru &amp; Dom Rep, and all of the ingredients are organically produced. I had a bar of the &nbsp;<a href=\"http:\/\/www.chocolateandlove.com\/categories-products\/dark-chocolate\/chocolate-and-love\/crushed-diamonds-organic-dark-truffle-chocolate-with-cocoa-nibs-100g-bar-p-1120.html\">Crushed Diamonds<\/a>,&nbsp;which was a really interesting bar of silky dark chocolate and slightly crunchy little chunks of cocoa. The flavour was full, just that right balance of sweetness. This is definitely a winner. The other was a bar of <i>&nbsp;<\/i><a href=\"http:\/\/www.chocolateandlove.com\/categories-products\/dark-chocolate\/chocolate-and-love\/the-coffee-affair-organic-dark-chocolate-with-coffee-100g-bar-p-1121.html\">The Coffee Affair<\/a>,&nbsp;again a lovely melting mouthfeel, but perhaps a little too powerful on the coffee front for my own personal tastes but would have definitely pleased any true java lover.&nbsp;<\/span><\/div>\n<div style=\"text-align: justify;\"><span class=\"Apple-style-span\" style=\"font-family: Georgia, 'Times New Roman', serif;\"><br \/><\/span><\/div>\n<div style=\"text-align: justify;\"><span class=\"Apple-style-span\" style=\"font-family: Georgia, 'Times New Roman', serif;\"> Next up on the gift front was a beautiful new recipe book &#8216;Falling Cloudberries&#8217; by Tessa Kiros, which has the most gorgeous photography and seriously tempting recipes. It was a lovely pressie from <a href=\"http:\/\/www.blackharrow.com\/\"><b><span class=\"Apple-style-span\" style=\"color: black;\">Linsay Black<\/span><\/b><\/a> whose wedding I&#8217;d organised at <a href=\"http:\/\/www.royalscotsclub.com\/\"><b><span class=\"Apple-style-span\" style=\"color: black;\">RSC<\/span> <\/b><\/a><b>a<\/b> few weeks back. A quick flick through and I&#8217;d found a recipe for chocolate truffle torte. I knew that the fate of the remainder of those two bars was to be even better than simply being scoffed by The Silver Fox and myself.<\/p>\n<p>So, here&#8217;s a slight tweak on the recipe, which is so simple and the end result is a rather lovely soft chocolate brownie type of treat. There was a nice hint of the richness from the coffee-flavoured chocolate too. Perfect with a scoop of vanilla ice cream.<\/p>\n<p><b>Ingredients<\/b><br \/>100g soft brown caster sugar<br \/>100g dark chocolate (I used 50g each of the above two bars, and the end result was a lovely rich flavour)<br \/>100g organic unsalted butter (and a little extra to grease the tin)<br \/>2 tsp vanilla extract<br \/>3 medium-sized free range eggs, separated.<br \/>40g sifted plain flour (and a little extra for the tin)<br \/>50g finely ground hazelnuts.<br \/>A little bit of extra brown sugar for the top before putting in the oven.<br \/><b><br \/><\/b><br \/><b>Method- written in easy speak!&nbsp;<\/b><\/p>\n<p>Firstly, grease and flour a 20cm springform cake tin so it&#8217;s ready for action.<\/p>\n<p>In a non-stick pan, slowly melt the sugar and the butter together. Once fully melted, add the chocolate and again slowly melt.<\/span><\/p>\n<div style=\"text-align: center;\"><span class=\"Apple-style-span\" style=\"font-family: Georgia, 'Times New Roman', serif;\"><\/span><span class=\"Apple-style-span\" style=\"font-family: Georgia, 'Times New Roman', serif;\"><a href=\"http:\/\/4.bp.blogspot.com\/_v0UdCJPF7lg\/TM3oRtXpQTI\/AAAAAAAAATA\/VjEsTzmnpUM\/s1600\/choc.jpg\" imageanchor=\"1\" style=\"margin-left: 1em; margin-right: 1em;\"><img loading=\"lazy\" border=\"0\" height=\"200\" src=\"http:\/\/4.bp.blogspot.com\/_v0UdCJPF7lg\/TM3oRtXpQTI\/AAAAAAAAATA\/VjEsTzmnpUM\/s200\/choc.jpg\" width=\"150\" \/><\/a><\/span><\/div>\n<p><span class=\"Apple-style-span\" style=\"font-family: Georgia, 'Times New Roman', serif;\"><br \/>Transfer to a large mixing bowl and allow to cool for at least 20 minutes.<\/p>\n<p>Whilst the chocolatey mixture is cooling, turn on the oven to around 170c for fan-assisted.<\/p>\n<p>Separate the egg yolks from the whites. Whisk up the egg whites (ideally with an electric hand whisk) until they&#8217;re doing that stiff peaks thing.<br \/><\/span><br \/><span class=\"Apple-style-span\" style=\"font-family: Georgia, 'Times New Roman', serif;\"><\/span><br \/><span class=\"Apple-style-span\" style=\"font-family: Georgia, 'Times New Roman', serif;\"><\/span><br \/><span class=\"Apple-style-span\" style=\"font-family: Georgia, 'Times New Roman', serif;\"><\/span><br \/><span class=\"Apple-style-span\" style=\"font-family: Georgia, 'Times New Roman', serif;\"><\/p>\n<div style=\"text-align: center;\"><a href=\"http:\/\/3.bp.blogspot.com\/_v0UdCJPF7lg\/TM3oGugQRFI\/AAAAAAAAAS8\/XoSH05E961w\/s1600\/whites.jpg\" imageanchor=\"1\" style=\"margin-left: 1em; margin-right: 1em;\"><img loading=\"lazy\" border=\"0\" height=\"200\" src=\"http:\/\/3.bp.blogspot.com\/_v0UdCJPF7lg\/TM3oGugQRFI\/AAAAAAAAAS8\/XoSH05E961w\/s200\/whites.jpg\" width=\"150\" \/><\/a><\/div>\n<p>Once the chocolate mixture is cool, add in the egg yolks and vanilla extract and mix well.<\/p>\n<p>Add in the sifted flour and mix, followed by the ground hazelnuts.<\/p>\n<div style=\"text-align: center;\"><a href=\"http:\/\/1.bp.blogspot.com\/_v0UdCJPF7lg\/TM3n8JRlLRI\/AAAAAAAAAS4\/sTgRC28lwoE\/s1600\/hax.jpg\" imageanchor=\"1\" style=\"margin-left: 1em; margin-right: 1em;\"><img loading=\"lazy\" border=\"0\" height=\"150\" src=\"http:\/\/1.bp.blogspot.com\/_v0UdCJPF7lg\/TM3n8JRlLRI\/AAAAAAAAAS4\/sTgRC28lwoE\/s200\/hax.jpg\" width=\"200\" \/><\/a><\/div>\n<p>The last step is the only one that needs a tiny bit of discipline, which is folding in the egg whites. The aim is to add them in slowly and carefully to keep as much &#8216;fluff&#8217; in the mix as possible. Fold in to the chocolate mix a spoon\/scoop at a time and slowly combine.<\/p>\n<p>Once done, transfer the mix to the baking tin and sprinkle the top with a little bit of brown sugar.<\/p>\n<p>Bake for around 25-30 minutes (check after 25 minutes) . The less cooking time, the softer the cake.
